About Chef Tal Baum

Tal Baum is the founder and proprietor of Oliva Restaurant Group. In 2015, she opened Bellina Alimentari at Ponce City Market, launching what would become a collection of restaurants that explore her cross-cultural upbringing. Today, the group encompasses some of Atlanta’s most beloved restaurants, including Bellina Alimentari and Atrium at Ponce City Market, Rina on the Atlanta BeltLine’s Eastside Trail, and at The Avalon in Alpharetta, and Carmel at Buckhead Village.

Born and raised in Haifa, Israel, Baum moved to Florence, Italy, at the age of 21 to study architecture at Florence University. She remained in Italy for seven years, mastering the language and developing an intimate knowledge and love of Italian cuisine. Her culinary journey, coupled with her architectural background, inspired her to become a restaurateur.

Oliva restaurants represent chapters of Baum’s life and the various places she’s lived. Bellina Alimentari pays tribute to her years living in Italy and is inspired by cafes and alimentari shops in the northern part of the country. Guests can enjoy a seasonal meal, sip unique wines, shop the market, or learn how to make pasta in a cooking class at this award-winning restaurant.

Rina symbolizes her early life in Israel. Rina offers casual, Middle Eastern street food on the Atlanta Beltline’s Eastside Trail in Old Fourth Ward, as well as at The Avalon in Alpharetta. Inspired by the beachside restaurants of Haifa, the food, drinks, and ambiance are quintessentially effervescent. The fun, colorful restaurant space invites guests to enjoy modern takes on Middle Eastern street food made with local ingredients and inspired by Baum’s traditional family recipes. Diners can expect mezze, various hummus options, pita sandwiches, and platters like Amba Chicken, a Spiced Lamb Burger, and Jaffa Fried Fish.

Atrium and Carmel represent Tal’s current chapter, showcasing the evolution of dining in America. Atrium is an American bistro and martini bar offering seasonally driven appetizers, salads, flatbreads, and larger entrees. For weekend brunch, guests can expect a select range of entrees, plus caffeine-infused cocktails, mimosa bottle service, and more. Carmel draws inspiration from the shores of California and the Yucatan Peninsula, as well as Baum’s upbringing on the Mediterranean coast, serving inspired contemporary seafood in Buckhead Village.

As one of only a few women-led restaurant groups in Atlanta, Oliva prioritizes working with small businesses, providing opportunities to local talents, and expanding culinary perspectives. While each location offers its own unique experience and showcases work by local artisans, guests can immediately feel Baum’s sense of style, creativity, and attention to detail radiating through each restaurant space.
